Finnish Carrot Pie

Finns love Carrot Cake This carrot cake is so dense and moist, the Finns call it a pie! Perfectly spiced with Cream Cheese frosting...a cool dessert on a hot day!
INGREDIENTS-Base-baking sheet pan
- 5 Eggs
- 2 1/4 cups Sugar
- 2 tsp baking soda
- 3 tsp baking powder
- 5 tsp cinnamon
- 3 tsp vanilla sugar-(beans in sugar)
- 3 1/4 cups wheat flour
- 1 1/4 cups melted butter or oil
- 3 cups grated carrots
Icing
- 1/2 cup soft butter-unsalted
- 1 cup cream cheese
- 2 cups confectioner sugar
- 5 tsp vanilla sugar
- Walnuts or almond flakes
Prep time: 30 Minutes
Cook time: 20-25 Minutes
Degrees 395 (F)...200 (C)
- Peel and grate carrots with a fine blade
- Beat the eggs & sugar until light & foamy
- Mix dry ingredients together & add to egg mix..then add melted butter/oil & carrots
- Pour the dough onto a baking sheet lined with baking paper & bake at 395 (F) for 20-25 Mins...Cool before frosting
Frosting:
- -Beat the soft butter, cream cheese, icing sugar & vanilla sugar until smooth
- -Spread the frosting over the cooled pie/cake
- -Sprinkle with walnuts or almonds
