Finns love Carrot Cake This carrot cake is so dense and moist, the Finns call it a pie! Perfectly spiced with Cream Cheese frosting...a cool dessert on a hot day!

INGREDIENTS-Base-baking sheet pan

  • 5 Eggs
  • 2 1/4 cups Sugar
  • 2 tsp baking soda
  • 3 tsp baking powder
  • 5 tsp cinnamon
  • 3 tsp vanilla sugar-(beans in sugar)
  • 3 1/4 cups wheat flour
  • 1 1/4 cups melted butter or oil
  • 3 cups grated carrots

Icing

  • 1/2 cup soft butter-unsalted
  • 1 cup cream cheese
  • 2 cups confectioner sugar
  • 5 tsp vanilla sugar
  • Walnuts or almond flakes

Prep time: 30 Minutes
Cook time: 20-25 Minutes
Degrees 395 (F)...200 (C)

  1. Peel and grate carrots with a fine blade
  2. Beat the eggs & sugar until light & foamy
  3. Mix dry ingredients together & add to egg mix..then add melted butter/oil & carrots
  4. Pour the dough onto a baking sheet lined with baking paper & bake at 395 (F) for 20-25 Mins...Cool before frosting

Frosting:

  1. -Beat the soft butter, cream cheese, icing sugar & vanilla sugar until smooth
  2. -Spread the frosting over the cooled pie/cake
  3. -Sprinkle with walnuts or almonds
